Abstract:
Intelligent packaging systems are a new concept whereby traditional packaging is enhanced to provide better user information about product attributes. Various pH-sensitive dyes have been used in packaging that provides information on food quality by color change; for example, bromothymol blue (BTB) is widely used due to its high sensitivity to variation in pH. However, in order to overcome its strong hydrophilicity, a tetrabutylammonium (TBA) ion was used to make ion pairs with BTB. A BTB⁻/TBA⁺ ion-paired dye was prepared and used to develop a CO2-sensitive intelligent packaging film. A branched polyethylenimine (bPEI) was added to the indicator solution to improve the film’s sensitivity to CO2 exposure. The formation of the ion pairs was confirmed by Fourier transform infrared (FTIR) spectroscopy, and the film’s characteristics, such as color change and thermal properties, were confirmed. Various CO2-sensitive multilayered packaging films were manufactured and tested in the packaging of kimchi. Our results demonstrate the applicability of the CO2 sensor with ion-paired dye in commercial food packaging films.
